Serves 12 – Serving Size: 2 bruschetta
Ingredients:
1 French Baguette
3/4 cup diced strawberries or pomegranate
3/4 chopped cherry tomatoes
2 Tbsp chopped Italian leaf parsley
2 Tbsp olive or canola oil
1 Tbsp balsamic vinegar
2 Tbsp goat cheese
salt to taste
Directions:
1. Preheat oven to 450 degrees Celsius.
2. Slice the baguette on the diagonal into 24 slices. Drizzle each slice with olive or canola oil. Lay bread oil side down onto a baking sheet. Bake for 5 minutes or until the bread starts to brown. Remove bread to a serving dish (toasted side up).
3. While bread bakes, combine strawberries, tomatoes, olive oil and vinegar in a small bowl. Season with salt (to taste). Spoon mixture over bread slices, Sprinkle with parsley and crumbled goat cheese. Serve immediately.
